Has this ever happened to you:
You are in the middle of baking cookies. You have already started to mix the wet and dry ingredients together, when you open the fridge to get an egg and... THERE ARE NO EGGS THERE!!
Well, if it has, have I got a solution for you. Turns out, that you can substitute for egg in cookie recipes. One tablespoon of ground flax seed mixed with 3 tablespoons of warm water is a substitute for one egg. Let the water and flax seed stand for 1 minute, then add it to the mix and you are good to go.
Now I am not ready to swear by this yet. But I will tell you that my cookies turn out wonderfully. And, I feel like they are a bit healthier. Yeah, my cookies have flax in them. It just sounds healthier, even though its really not.
I may just use flax seed instead of eggs sometimes, even when I have eggs.
